Kale rice with broccoli stalks

I always keep the stalks and use them to cook soup, but in this case I have decided to transform them into a very nutritious rice.

Rice
3 Kale leaves
Broccoli Stalks (leftovers)
Salt
1 Onion
1 tbsp Olive oil

First, boil the kale for a few minutes, and keep the water (should be about two cups). Heat the olive oil in a frying pan, and start adding the kale and the broccoli stalks (thinly chopped - both kale and stalks). Add salt and stir. When the rice starts to color pour the water left from the kale and stir. It is ready when the rice is cooked. Goes well with fillets of fish.

  1. oh i just made kale last week...trying to incorporate it into my diet more often...I'm going to have to try this one:)
